This past week I was still suffering from a calf injury, getting over a nasty cold and running my kids eight different directions! Let’s just say that it wasn’t my best week! Going to the grocery store to forage for dinner wasn’t in the cards so instead I foraged in my refrigerator and what came out was fantastic! I took every vegetable in my refrigerator and roasted it in the oven with a little olive oil, salt, pepper and garlic. Once that was done I placed the vegetables on top of a giant bed of lettuce and drizzled some oil free Lemon Basil Vinaigrette on top. Presto, a beautiful salad on a hot night! So the next time you just can’t figure out what to fix for dinner try cleaning out your refrigerator! Every now and then magic can happen!
Lemon Basil Viaigrette

2 tbsp fresh lemon juice
2 tbsp balsamic vinegar
1/2 cup water
1/4 cup raw almonds or 1/8 cup raw almond butter
1/4 cup raisins
1/3 cup fresh basil leaves
1 tsp dijon mustard
1 clove garlic
Blend in a high powered blender until smooth.
